Roasted Red Pepper and Feta Quiche

My Mum has been making amazing quiches since I was a kid and has used this recipe in every restaurant she has worked in. She always gets compliments so I now I am using this recipe. You can use the basic quiche recipe for any kind of filling you want but make sure you pack it with as much cheese as possible. It is very versatile and really easy to make. Serve for lunch or dinner with a simple side salad and fresh bread.

Roasted Red Pepper and Feta Quiche

Roasted Red Pepper and Feta Quiche

Ingredients:
3 Eggs
200 ml Sour Cream
200 ml Whole Milk
1 Tart Shell or Blind Pastry Case
2 Roasted Red Peppers (from a jar is fine)
50 g of Strong Cheddar
50 g of Feta Cheese
Salt and Pepper to taste

Method:
1. Pre-heat the oven to 350°F / Gas mark 4
2. In a large jug or bowl crack in the eggs and measure out the milk and sour cream.
3. Whisk the wet ingredients together.
4. Chop up the red peppers and grate the cheese.
5. Combine all the ingredients into the quiche mixture and season.
6. Place the pastry shell onto a baking sheet so if there is any spillage it doesn’t make a mess in your oven.
7. Carefully pour the quiche mixture into the pastry shell.
8. Place the baking tray with the quiche in the oven and bake for about 30 minutes. When the quiche is ready it will be set in the middle and golden brown on top.
9. Let the quiche sit for about 5 minutes before you serve.
