Banana Bread

Banana Bread

This is my favourite banana bread recipe by far. It’s so light and fluffy and couldn’t be easier to make. If you have seen my other baking recipes you know I usually avoid making cakes because I’m pretty crap at it. Not with this recipe though!

I often make it with the kids because it doesn’t require lots of measuring and preciseness (which everyone knows kids can’t stand) and it only has about 4 steps so they don’t get impatient. It will be ready to go in the oven in 10 minutes and is stress free for the grown ups.

Ingredients:
3 Bananas, very soft and mushy
140g Butter, softened
140g Flour
140g Sugar
2 tsp Baking Powder
2 Eggs

Method:

  1. Preheat the oven to 350º and grease and line a loaf tin.
  2. In a large bowl, beat the softened butter and sugar until it is light and creamy.
  3. In a separate bowl, mash up the bananas with a fork until they are very smooth. Try and get rid of as many lumps as possible.
  4. Add the eggs to the creamed butter and sugar.
  5. Add about half the flour to the mixture and carefully combine. Then slowly add the banana, baking powder, and the remaining flour. Mix it well to make a smooth cake batter.
  6. Pour the mixture into the lined tin and place in the oven. Bake for about 30-40 minutes until golden brown and spongy. If you can insert a skewer into the middle of the loaf and it comes out clean its done. Slice up and enjoy!
