Oven Roasted Spicy Sweet Potato Wedges

I made these lovely wedges the other night to go with some veggie black bean burgers and smashed avocado. They go great as a side dish to burgers and wings but don’t be surprised if you end up eating half of them before they make it to the table. They go great with some guacamole and chipotle mayo…delicious!

Spicy Sweet Potato Wedges

Spicy Sweet Potato Wedges

Ingredients:

2 Large Sweet Potatoes
1 tsp Smoked Paprika
1 tsp Garlic Powder
1/2 tsp Cayenne Pepper
Olive Oil
Salt

Method:

  1. Pre-heat the oven to 425º.
  2. Wash and dry the sweet potatoes. Cut the potatoes in half and then cut the halves into wedges.
  3. Place the wedges in a large bowl and season with the paprika, garlic powder, cayenne, and a good pinch of salt. Pour in a little olive oil (about 2 tbsp) and give them a shake, making sure all the wedges are covered in the seasoning and oil.
  4. Place the wedges, cut-side down, onto a baking sheet. Be careful not to overload the tray and leave a little space between each wedge.
  5. Place in the oven and bake for about 15 minutes. After 15 mins turn the wedges over using a spatula and place back in the oven to crisp up the other side.
  6. Bake for an addition 15 minutes.
  7. Remove from the oven and sprinkle (generously) the wedges with salt.
