Scones with Jam and Cream

My mum makes the best scones! She is a wonderful chef/baker with her own bakery business so I go to her for any baking advice. I wanted to make some scones at home so she sent me her recipe. Usually I avoid baking because I tend to mess it up and I’m not very patient with it. However these are really simple to make and they came out perfect. Very yummy with a big dollop of cream and jam.

Ingredients:

  • 4 Cups Flour
  • 1/4 Cup Sugar
  • 350g Butter room temperature
  • 2 tbsp Baking Powder
  • 2 tsp Salt
  • 4 Eggs
  • 3/4 Cup Cream
  • 1 Egg Yolk
  • 2 tbsp Milk

Method:

  1. Pre-heat the oven to 375º
  2. In a large bowl pour in the flour and add the room temperature butter. Using your fingertips, rub the butter into the flour until you get a bread like texture.
  3. Add in the sugar, salt, and baking powder. Mix it together gently.
  4. Make a well in the middle of the mixture and pour in the wet ingredients (eggs and cream).
  5. Bring the mixture together with a knife and tip it out onto a clean, lightly floured, surface.
  6. With your hands, form the mixture into a large circle about a cm thick.
  7. Cut the mixture into 8 large triangles.
  8. In a little bowl mix together an egg yolk and the milk. Brush the scones with the mixture.
  9. Place on one or two baking sheet that has been covered with baking paper. Bake for about 20 minutes until they are golden brown.
  10. Remove from the oven and set them aside to cool down before serving. Dollop on some cream and jam and dig in!
